I'm too lazy to write out a detailed tutorial and such , but I think the one I linked is kinda simple to follow

What I did so far:
-I was able to solve the "Can't convert 'bytes' object to str implicitly" python script error: I just had to use Python 2.6.x instead of 2.7.x or 3.5.x. (32bit).
-I extracted everything I wanted from the .dat files (.nif and .dds).
-My current setup was way too up-to-date. Had to downgrade Python and uninstall all my Blender version & scripts.
-nifskope was unable to extract anything from those .nif. It gives me all these errors: "Failed to load" + "The file could not be read - failed to load file header (version 1e020003, 30.2.0.3)" + Version 30.2.0.3 is not supported.
-I was able to get Blender 2.49 nif importer script to work, but I have no idea if I had specific settings to use... 'cause nothing got imported in Blender... lol
So I uninstalled the nif & Blender stuff and am now ready to start again fresh.

You can try to open the .nifs with Noesis and export them into some other format like .psk or .fbx

I was able to open that .nif model and find the missing hand textures. Have a look!

Now, I tried to export in both suggested formats, but I can't load it in XNA. Somehow it can't export the Material Libray (mtl)...
EDIT: I also tried to export to ascii mesh and convert (using XNA Lara utilities), but that still doesn't work, yet...
