You could do the thing I always did when playing Dark Souls and getting stuck on a really tough boss
Restart the game and get better stats

I think there's a skill respec, but even if I'm wrong I have no interest in replaying any chunk of it all over again.

.........
Let the Souls frustration flow through you.
And yes you can respec via The Book of Reincarnation from the Blacksmith. It costs 10,000 gold at first and will rise up every time it gets used so that's is where you have to be careful. Definitely much more lenient than the Souls series but at a high cost.
Also, this game will get high difficulty missions and PVP mode for flee in late March and April respectively.
April will also see the start of the paid DLC, beginning with the "Northeast Dragon" mission, which is mostly likely the Date Masamune one as he was featured in the game's ending sequence.

Ummm, yeah, guess it's not for me. Even if NG4 returns to roots, I guess I've reached the cap of my gaming skill

That's disturbing, one hand it's neat to see the tactics that work. I didn't even know you could stun early bosses like that.... BUT it feels like a cheat to know that there's such path through the game that makes it look so broken in favor of the player.
